Yesterday I brewed this as a first attempt (in over 5 years of AG brewing) of a bitter. I have recently warmed to the style again after growing bored of the average identikit US and NZ hopped IPAs and pales that seem all over the place for the last few years.

2.5kg Maris otter
2.5kg Irish pale malt
500g crystal malt

Strike: 14l @ 74oC treated with 3tsp gypsum and 1tsp calcium chloride and 1.5ml phosphoric acid at 10% - ph 5.8
Mash: 90 minutes at 66oC
sparge: to 6gallon with 85oC liquor treated with 1tsp gypsum and 2ml phosphoric acid at 10% - ph 6.5

Boil:
@90 - 40g northern brewer leaf 7.3%
@15 - 10g northern brewer leaf
@10 - 20g northern brewer leaf
@1 - 10g northern brewer leaf

Yeast: Gervin gv-12 (Nottingham?) dehydrated and added to cooled worth, put In a water bath with aquarium heater at 19oC.

Any feedback appreciated or other advice on what works well in bitters? Yeasts, fermenting temps, hops, malts etc.
